Winter thoughts...

Winnimere from Cellars at Jasper Hill in Vermont, luxurious cheese made from raw milk only during winter months when the cows eat hay, resulting in a creamier-textured cheese. But now the masterfully complex Winnimere is available again until April. Its rind, washed in local beer and bound with a strip of spruce bark, encloses an unctuous, satin interior that harbors scents of fruit and smoke and has mellow richness with tangy undertones of earth:

Snow White Goat Chedda, Carr Valley, WI
A creamy white Goat Cheddar Cheese made in 38# wheels and cave aged for 6 months. The flavor is deep and complex with pleasant earthy notes. Took 2nd Place at the 2007 American Cheese Society Competition and 2008 "Best in Show" at the American Cheese Society Competition.

Welcome to Fall

After a small hiatus bloomy rind is back on line and ready for the Fall and Holiday season.

New  cheese from IndianaArabella is a raw milk soft Italico cheese inspired by the fragrant, buttery cheeses of the Northern Italian grassland. The product comes in a rectangular brick shape (4×6 in). It is a pale creamy yellow colored cheese, with a soft cream to orange brown rind. It maintains a distinctly earthy aroma, reminiscent of bread dough proofing. Slightly salty, savory and mildly lactic, the flavor sweetens with age while the body grows smooth and silky.

Wyfe of BathSucculent, nutty and creamy. This semi-hard cheese is redolent of buttercups and summer meadows. It is made by placing the curd in cloth lined baskets, it retains the basket shape and has a soft light caramel colour. It is made with vegetarian rennet
Wyfe of Bath takes its name from Chaucer’s Canterbury Tales and, like the tale, when you cut into a Wyfe of Bath you will get a taste old England.

Patriots Championship Sunday...




Congratulations and thank you to the Patriots for not only winning but also making our winter go all the more faster with their run to the Superbowl.  For this Sunday's game against the Ravens Bloomy Rind will have tailgate fair for all your needs.

Bread Cheese from Carr Valley is a cheese you can put on the grill and cut for dipping.
It is similar to a grill cheese but, without the bread. great for gatherings!!!

Petite sandwiches are always perfect for any gathering as well as our Flat breads made on naan bread with assorted toppings such as gorgonzola and red onion jam or romesco and sheeps milk feta.

A cheese slate is a touchdown with any party, with a variety of cheeses, dried fruits and jam. How could you go wrong.
