
Last night I had the opportunity to try a fabulous cheese from Jasper Hill. Winnimere is a washed rind cheese, stinky.. wrapped in dark spruce bark. The cheese is very creamy with subtle notes of beer, probably from the lambic beer the cheese is washed in. I paired a German Riesling with this cheese and it was a perfect marriage.. I hate to say the season for this cheese is ending soon, but Bloomy Rind will have some to offer when we finally open in May. It's a must try before it's to late...
Ooh...I definitely have to try this cheese. Everything I've had by Jasper Hill has been amazing, and I sure that the Winnimere is no exception. While I'm sure that you are correct about a German Riesling being a perfect marriage for it, I am inclined to pair it with a lambic, saison, or an American wild ale. (It may sound déclassé to some, but I have found that fine beers can be better matches for cheese than wines are.)
ReplyDeleteOpening in May, you say? Good! The Winnimere should be at a perfect age by then, and I am very much looking forward to seeing what the Bloomy Rind will become. Do you have any plans to offer the shipping of cheeses the way the Formaggio in Cambridge does?
